Food & Beverage Manager
- Profit-Center Management: Ensure F&B outlets, Conference, and Banqueting operations function as independent profit centers, meeting Hilton’s standards.
- Management Accountability: Oversee dedicated teams (Restaurant Manager / Head Chef) for profitability and service standards in each outlet.
- Budget Formulation and Management: Lead annual budget creation, aligning revenues, expenses, staffing, and equipment with business plans.
- Forecasting and Reporting: Provide accurate business change forecasts and updates.
- Supplier Relations: Collaborate with Purchasing Officer to maximize support for sponsorship, marketing, and pricing initiatives.
- Cost Control: Monitor and recommend cost control measures while adhering to budgets.
- Productivity and Efficiency: Maintain and correct productivity levels. Control vacation planning and minimize overtime.
- Standards Adherence: Ensure adherence to operational and brand standards.
- SOP Maintenance: Maintain and update SOPs in line with brand standards and outlet requirements.
- Guest Relations: Handle guest inquiries and complaints following established protocols.
- Marketing Initiatives: Collaborate in formulating annual marketing plan with supplier-supported budgets.
- Team Development: Conduct monthly meetings and daily briefings. Train and develop Outlet Managers.
- Safety and Compliance: Ensure adherence to Fire, Hygiene, Health, and Safety policies. Drive FSMS.
- Inventory Management: Conduct bi-yearly inventory of operating equipment.
Qualifications and Skills:
- 5-8 years of experience as Head of Food & Beverage in a 4/5-star hotel or high-standard individual restaurant.
- Proficient in English (verbal and written).
- Strong mathematical and computer skills.
- Thorough knowledge of food and beverage operations, cost control, and service techniques.
- Excellent leadership, people management, and training skills.
- Guest-oriented with a focus on exceeding service standards.
